Roasted Sweet Potato & Black Bean Tacos are the perfect mix of smoky, sweet, and savory flavors. These plant-based tacos are packed with roasted sweet potatoes, seasoned black beans, and a zesty lime crema. Quick, healthy, and full of texture — ideal for weeknight dinners or meal prep.

  • For the Tacos:

    1. 2 medium sweet potatoes, peeled and cubed

    2. 1 tbsp olive oil

    3. 1 tsp smoked paprika

    4. ½ tsp cumin

    5. ½ tsp chili powder

    6. Salt and pepper, to taste

    7. 1 can (15 oz) black beans, rinsed and drained

    8. 1 tsp lime juice

    9. 8 small corn or flour tortillas

    Optional Toppings:

    • Avocado slices

    • Lime crema

    • Chopped cilantro

    • Shredded lettuce

    • Feta cheese

    For Lime Crema (optional):

    1. ½ cup Greek yogurt or sour cream

    2. 1 tbsp lime juice

    3. 1 tsp honey or agave

    4. Pinch of salt


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Toss cubed sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper. Spread evenly on the baking sheet.

  3. Roast for 25–30 minutes, flipping halfway, until golden and tender.

  4. Warm black beans in a skillet with lime juice and a pinch of salt for 3–5 minutes.

  5. In a small bowl, whisk together all lime crema ingredients until smooth.

  6. Warm tortillas in a skillet or microwave until soft and pliable.

  7. Assemble tacos: fill each tortilla with roasted sweet potatoes and black beans, then top with avocado, cilantro, lettuce, or feta.

  8. Drizzle with lime crema and serve immediately.

Notes

Add roasted corn or bell peppers for extra flavor.

Swap Greek yogurt for vegan yogurt to make it dairy-free.
