Ingredients

1 ½ lbs boneless skinless chicken thighs, cut into chunks

2 cups fresh pineapple chunks

1 red bell pepper, cut into squares

1 zucchini, sliced into rounds

Homemade Teriyaki Sauce
- ½ cup low-sodium soy sauce (or tamari for gluten-free)
- ¼ cup pineapple juice
- 3 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tbsp cornstarch + 2 tbsp water (slurry, optional for thickening)
Instructions

In a saucepan, whisk together soy sauce, pineapple juice, honey, vinegar, garlic, and ginger. Simmer until slightly thickened, adding cornstarch slurry if needed. Set aside.

Place chicken chunks in a bowl and pour half of the sauce over them. Marinate for at least 30 minutes (or up to 2 hours).

Thread marinated chicken, pineapple, peppers, zucchini, and onion onto skewers.

Preheat grill to medium-high heat. Grill skewers 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.

Notes
Soak wooden skewers in water for 30 minutes to prevent burning.
Swap veggies with mushrooms, cherry tomatoes, or yellow squash.
Use chicken breast if preferred, but thighs stay juicier on the grill.
