  • 2 cups fresh pineapple chunks

  • 1 red bell pepper, cut into squares

  • 1 zucchini, sliced into rounds

  • 1 red onion, cut into chunks

    Homemade Teriyaki Sauce

  • ½ cup low-sodium soy sauce (or tamari for gluten-free)
  • ¼ cup pineapple juice
  • 3 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch + 2 tbsp water (slurry, optional for thickening)

Instructions

  1. In a saucepan, whisk together soy sauce, pineapple juice, honey, vinegar, garlic, and ginger. Simmer until slightly thickened, adding cornstarch slurry if needed. Set aside.
