  • 1 cup cooked chicken breast or thighs, shredded or diced

  • ½ cup cooked rice (white or brown)

  • ½ cup black beans, drained and rinsed

  • ¼ cup shredded cheddar or Mexican cheese blend

  • ¼ cup salsa or pico de gallo

  • ¼ avocado, sliced (optional)

  • 2 tbsp sour cream or Greek yogurt (optional)

  • Fresh cilantro, for garnish


Instructions

  1. Warm tortillas in a skillet or microwave until soft and pliable.

  2. Spread rice and beans evenly in the center of each tortilla.

  3. Add chicken, cheese, salsa, and avocado slices.

  4. Fold the sides in, then roll tightly from the bottom to form a burrito.

  5. (Optional) Place burrito seam-side down in a hot skillet for 1–2 minutes per side to crisp it up.

Notes

Use rotisserie chicken to save time.
