Ingredients

1 lb (450 g) boneless chicken breast, cut into bite-sized pieces

1 cup uncooked orzo pasta

2 cups broccoli florets, chopped

2 tbsp olive oil or butter

3 cloves garlic, minced

2 cups chicken broth

1 cup milk (whole or 2%)

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt & black pepper, to taste
Instructions

Heat olive oil or butter in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through (about 6–7 minutes). Remove and set aside.

In the same skillet, sauté garlic for 1 minute until fragrant. Add uncooked orzo and toast lightly.

Pour in chicken broth and milk. Bring to a simmer, cover, and cook until orzo is tender (8–10 minutes), stirring occasionally.

Stir in broccoli florets and cook for another 3–4 minutes until tender.

Return cooked chicken to the pan, then add cheddar and Parmesan. Stir until creamy and smooth.

Adjust seasoning and serve warm.
