What You’ll Need
2 cups grated carrots
1 ½ cups all-purpose flour

1 tsp baking powder

½ cup vegetable oil
½ cup unsweetened applesauce
¾ cup brown sugar
2 large eggs
1 tsp vanilla extract
½ cup chopped walnuts or pecans (optional)
½ cup crushed pineapple, drained (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate large bowl, combine the oil, applesauce, and brown sugar. Mix until smooth.
