Ingredients

4 large yellow onions

1 lb lean ground beef

1 cup cheddar cheese cubes

8–10 slices bacon

1 egg

½ cup breadcrumbs

2 garlic cloves, minced

1 tsp salt

½ tsp black pepper

½ tsp smoked paprika

BBQ sauce (optional, for glaze)
Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with foil.

Peel onions and cut them in half. Separate into large layers to create “shells.”

In a bowl, mix ground beef, egg, breadcrumbs, garlic, salt, pepper, and paprika.

Take one onion layer, fill with a spoonful of beef mixture, add a cheddar cube, then cover with another onion layer.

Wrap each stuffed onion with bacon strips, securing with toothpicks if needed.

Place on the baking sheet and brush lightly with BBQ sauce if desired.

Bake for 40–45 minutes, until bacon is crisp and beef is cooked through.

Let cool slightly before serving.
Notes
For extra smoky flavor, try grilling instead of baking. You can swap cheddar for mozzarella, pepper jack, or gouda. Serve with dipping sauces like ranch, BBQ, or spicy mayo.
